Ingredients
- 1 1/2 cups of flour, spooned and leveled (use gluten-free if needed)
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 2 large eggs
- 2/3 cup granulated cane sugar (or alternative)
- 1/2 cup extra-virgin olive oil
- 1 tsp. vanilla
- 1/2 cup Lowfat Strawberry Kefir
- 7-8 fresh sliced strawberries, hulled and halved into heart-shapes
- sprinkling of powdered sugar (about 1 tbsp. for top and bottom of cake)
- optional (see notes): 1/2 cup whipped Farmer Cheese
Directions
- Preheat the oven to 350 F°. Line an 8-inch cake pan with parchment paper and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. Set aside.
- In a larger bowl, add the eggs, olive oil, and vanilla extract. Mix well, then stir in Lowfat Strawberry Lifeway Kefir.
- Add the dry ingredients from step 2 to the wet ingredients from step 3, and whisk just until combined.
- Sprinkle in the powdered sugar into the pan lined in parchment paper (the underside will be the top after baking).
- Add the slices of strawberries next on top of the powdered sugar, arranging them evenly. Pour the cake batter over the top.
- Bake the cake for 40-45 minutes until the center is set and the cake is golden brown. When ready to serve, run a knife along the edges of the pan, and invert it onto a cake plate. Peel off the parchment and sprinkle with additional powdered sugar (optional). Slice and enjoy!
- Add a drizzle of extra kefir or a dollop of Lifeway Whipped Farmer Cheese for extra decadence.
