Directions

  1. Line a large baking sheet with parchment paper. Set aside.
  2. Blend the Lifeway Farmer Cheese to a smooth consistency. In a bowl, add the fresh strawberries, Lifeway Farmer Cheese, and honey or maple syrup; mix until combined.
  3. Scoop 2 tbsp. of the mixture onto the parchment-lined baking sheet. Place in the freezer for at least 1–2 hours to allow the clusters to firm up completely.
  4. While the clusters are freezing, melt the white chocolate and coconut oil in a heatproof bowl in the microwave using 20-second intervals. Stir between intervals to ensure a smooth, lump-free consistency. Once melted, whisk in the matcha green tea powder until fully incorporated.
  5. Remove the frozen yogurt clusters from the freezer. Working quickly, dip each cluster into the melted matcha white chocolate. Use a fork or spoon to help lift the cluster and allow any excess chocolate to drip off.
  6. Sprinkle each cluster with a tablespoon of the crushed, freeze-dried strawberries for added flavor and decoration. Place the coated clusters back onto the parchment-lined tray.
  7. Return the tray to the freezer and let the clusters set for at least 30 minutes, or until the coating is firm.
