Ingredients
- 1/2 cup melted Salted Kefir Butter
- 1/4 cup cane sugar
- 1/2 cup coconut sugar
- 1/3 cup ripe banana, mashed (about 1 small banana)
- 1 large egg yolk (not the white)
- 1 1/2 tsp. vanilla
- 1 1/2 cup all-purpose flour (use gluten-free if necessary)
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 3/4 cup dark chocolate chips (plus extra for topping)
Directions
- Preheat the oven to 350°F. Line a large cookie sheet with parchment paper.
- Combine the melted Lifeway Salted Kefir Butter, cane sugar, and coconut sugar in a large bowl and mix to blend. Add the mashed banana, egg yolk, and vanilla, then mix thoroughly so everything is well combined.
- Add the all-purpose flour, baking soda, and cinnamon into the bowl, then combine until everything is mixed well. Fold in the chocolate chips last and make sure they are evenly mixed into the dough.
- Use a cookie scoop or a small spoon to scoop up dough, then shape it into balls and add to the prepared baking sheets, spacing them at least 1 inch apart. Press a few extra chocolate chips onto each dough ball if desired. Bake for 10 to 12 minutes, until the edges are golden and the middles are just a bit soft.
- Let cool for 5 minutes on the baking sheets, then transfer the cookies to a wire rack to finish cooling. Serve and enjoy!
- Leftover Tips: These will keep for up to one week and will stay fresher if kept in the fridge. Warm up slightly before eating the leftover cookies, then enjoy!
