- 1 3/4 cups Lowfat Blueberry Kefir
- 1/2 cup frozen coconut cubes/meat
- 1 cup frozen blueberries
- 1 tsp. vanilla extract or flavoring
- 1-2 tbsp. flax, chia, and/or hemp seeds
- optional: fresh coconut shell for serving
- Garnish: fresh blueberries, unsweetened shredded coconut
Directions
- Blend the blueberry Lifeway Kefir, frozen coconut, frozen blueberries, vanilla, and flax, chia, and/or hemp seeds until thick and creamy. It should be very thick. If you want it thinner, add a little more kefir.
- Pour into your favorite glasses, or, if you have fresh coconut shells, serve in those as smoothie bowls. Garnish with fresh blueberries and shredded coconut, if desired. Enjoy!
