Directions

  1. Make the Filling:
    Add Lifeway Farmer Cheese, pumpkin, vanilla, and maple syrup to a food processor or blender and blend until mixed. Transfer to a bowl, then add almond flour, peanut butter powder, pumpkin spice mix, and low-sugar granola; mix until fully combined.
  2. With Pumpkin Molds:
  3. In a heatproof bowl, combine the chocolate chips and coconut oil. Melt in the microwave in 30-second intervals, stirring between each until smooth. Spoon a small amount of melted chocolate into each cavity of your silicone molds, spreading it evenly along the bottom and sides. Make sure the sides are fully coated. Place the molds in the fridge for about 10 minutes or until the chocolate hardens.
  4. Gently press the pumpkin filling into each chocolate-lined cavity, leaving a little space on top for the final chocolate layer.
  5. Spoon additional melted chocolate over the filling to seal each pumpkin, smoothing the tops with a spatula. Chill for about 20 minutes or until completely firm. Once set, gently remove from the molds and enjoy!
  6. Without Molds:
  7. Line a baking sheet with parchment paper. Using a cookie scoop, portion the filling and roll into balls. Place them on the prepared baking sheet, and refrigerate for 10 minutes.
  8. In a heatproof bowl, combine the chocolate chips and coconut oil. Melt in the microwave in 30-second intervals, stirring between each until smooth.
  9. Dip each pumpkin ball into the melted chocolate and place back on the parchment-lined bakina sheet. Chill for about 20 minutes or until completely firm. Serve and eniov!
