Directions

  1. Fill a large pot with about 2 inches of water and add 4 tbsp. of kosher salt. Bring to a boil over high heat. Add the lobster tails or claws to the basket, cover tightly, and steam until the shells are bright red and the meat is opaque, about 6–8 minutes for tails, 8–10 minutes for claws. Do not overcook.
  2. Once cool enough to handle, crack the shells and remove the meat. Cut into bite-sized chunks.
  3. In a small saucepan over low heat, melt 8 tbsp. Lifeway Kefir Salted Butter. Keep warm on the lowest heat setting, you want it liquid and silky, not bubbling.
  4. Add the lobster meat directly to the warm butter, then add the juice of one lemon. Gently toss to coat and warm through. The lobster should be warm and glossy, not re-cooked. Stir in the 1 tsp. chives, then remove from heat.
  5. Heat a skillet or griddle over medium heat. Melt the additional 2 tbsp. Lifeway Kefir Salted Butter in the pan. Place the buns in the pan and toast.
  6. Spoon the lobster meat into each toasted bun. Drizzle any remaining butter from the pan over the top. Garnish with more chives, fresh black pepper, and serve with a wedge of lemon on the side.
