Directions

  1. Blend the ingredients for the marinade until creamy. Set aside.
  2. Place the salmon (skin down) in a medium sized glass baking dish, then rub with olive oil and herb mix. Drizzle the marinade from step 1 over the salmon in the baking dish, reserving a couple tablespoons for serving. Marinate the salmon for 20-30 minutes in the fridge, and be sure to refrigerate the reserved marinade.
  3. Preheat the oven to 350° F. Bake the salmon for 10-12 minutes until flaky and tender.
  4. For the veggies, you can choose to serve them raw, grilled, or steamed —whatever you prefer. If cooking, prepare them by tossing with the olive oil, lemon juice, chives, salt, and pepper, then cook as desired and plate between 2 bowls. If serving them raw, simply add the cut veggies to a large bowl, toss them together with the olive oil, juice of 1/2 a lemon, chives, salt, and pepper, and stir well before dividing the mixture between 2 bowls.
  5. Top each bowl of veggies with a cooked piece of salmon, then drizzle some of the reserved marinade from step 2 on top. Serve and enjoy!
