Ingredients
For the Donuts:
- 2 cups Farmer Cheese
- 1/2 cup coconut sugar
- 1 1/2 cups gluten-free flour (or 1 cup almond flour with 1/2 cup coconut flour)
- 2 tsp. baking powder
- 3 eggs
- 1/2 cup avocado or coconut oil for frying
For the Cinnamon Sugar Spice Mixture:
- 1/4 cup additional coconut sugar
- 1/8 cup cinnamon
- 1 tbsp. ginger
- 1/2 tsp. nutmeg
Directions
- Whisk together eggs and 1/2 cup coconut sugar.
- Add in Lifeway Farmer Cheese and baking powder. Combine until smooth.
- Fold in the flour 1/2 a cup at a time. One fully incorporated, roll the dough into individual donut holes.
- Heat oil in a deep frying pan on medium/low. Once the oil has heated up, scoop the donut holes into the pan. Flip each round with a fork until each side turns golden brown.
- Mix together the Cinnamon Sugar Spice Mixture: 1/4 cup coconut sugar, cinnamon, ginger and nutmeg. Immediately after the donut holes are done frying, stir them around in the cinnamon spice mixture and allow to cool. Enjoy!
