Directions

  1. Bring a pot of water to a boil, then reduce the heat to low. Place the eggs in the water. Increase the heat back to high and set a timer for 14 minutes
  2. While the eggs are boiling, prepare an ice water bath and set aside. After 14 minutes, remove the eggs from the water and place in the ice water bath to chill. Once the eggs have cooled completely, peel them and slice in half lengthwise.
  3. Scoop the yolks into a small bowl and place the egg whites on a serving plate.
  4. To make the filling, add the yolks, mayonnaise, Lifeway Farmer Cheese, dijon mustard, lemon juice, shallot, dill, salt and pepper to a bowl. Stir everything together until it's completely smooth.
  5. Use a plastic bag or pastry bag to put a portion of the egg mixture back into the hole of each egg white. Then place a small piece of smoked salmon to top on each egg. Top with capers and dill sprigs and enjoy!
