- 1 frozen pie crust (9-inch)
- 2 cups fresh baby spinach, chopped
- 1/2 cup cherry tomatoes, halved
- 1 cup white cheddar cheese, shredded
- 1/4 cup grated Parmesan cheese
- 4 large eggs
- 1 cup Farmer Cheese
- 1 cup half and half
- 1 tsp. salt
- fresh cracked black pepper
- 1/2 tsp. garlic powder
- ½ tsp. onion powder
- 1/4 tsp. red pepper flakes
- 1 tbsp. extra virgin olive oil (for the spinach)
- 2 tbsp. fresh parsley, chopped
Directions
- Preheat to 375°F and place the oven rack in the middle. Pre-bake crust according to package instructions.
- Sauté spinach in a pan with olive oil until wilted. Sprinkle half of the cheddar evenly over the crust. Layer spinach, dollops of Lifeway Farmer cheese, and cherry tomato halves. Sprinkle remaining white cheddar and Parmesan over the top.
- In a bowl, whisk together eggs, half and half and seasonings. Pour egg mixture slowly over pie filling. Bake for about 45 minutes, or until center is set and the top is golden brown.
- Once the top is golden brown, test to see if a fork comes out clean. Then remove from the oven and let it rest for 15 minutes before serving. Top with fresh parsley and enjoy!
