- 1/2 a package (8 ounces) Farmer Cheese
- 5 pitted dates
- 1/2 tsp vanilla extract
- 1 1/2 cups cubed watermelon
- pinch salt
Directions
- Blend all ingredients in a high speed until smooth. Add to ice cube tray and freeze for at least 3 hours.
- Transfer frozen watermelon chunks into a blender and blend until smooth. Add the mixture into a freezer safe container for an additional 30 minutes. Scoop, top with mint, and enjoy!
