- 4 oz prosciutto, thinly sliced
- 4 tbsp olive oil
- 6 green onion, sliced
- 3 garlic cloves, sliced
- 8 cups chopped kale
- Salt/pepper to taste
- 1 Lemon, juiced
- Gluten free sourdough slices
- 2 cups Farmer Cheese
- 4 large eggs
- Red pepper flakes to top
Directions
- In a skillet, cook prosciutto for a couple of minutes on each side.
- Remove and add in olive oil, onions and garlic. Cook until soft (about 11 minutes). Add in greens and cook for an additional 2 minutes. Season with salt/pepper and lemon juice.
- Remove and wipe clean. Cook eggs over easy.
- Toast Sourdough, top with Lifeway Farmer Cheese, greens mixture, and fried eggs. Top with red pepper flakes, and additional salt/pepper (optional). Enjoy!
