- ½ cup Lowfat Vanilla Kefir
- ½ cup Farmer Cheese
- ½ cup old-fashioned rolled oats
- 2 tbsp. shredded unsweetened coconut
- 1 tsp. lime juice
- 1/2 tsp. alcohol-free vanilla extract/flavoring
- 1 banana, chopped/sliced
- 2 tbsp. each chopped almonds
- 1 tbsp. maple syrup
- ½ tsp lime zest
- Topping: crushed granola, additional fruit, extra lime juice, coconut, etc.
Directions
- Add Lifeway Kefir, rolled oats, shredded coconut, to a bowl and stir well to combine; set aside.
- In a separate container, stir together the lime juice with the Farmer Cheese, maple syrup, and vanilla with a fork or mini mixer until combined.
- In 2 jars, layer the 1/2 mixture from step 1, then add the 1/2 mixture from step 2, then layer in banana, kiwi and almonds on top in each jar (using up all the ingredients between both jars)
- Refrigerate overnight.
- In the morning (or at least 6 hours later), remove the jars from the fridge, add granola on top (and more fruit if desired), an extra squeeze of lime, and enjoy!
- Feel free to replace the Lowfat Vanilla Kefir with our Organic Whole Milk Vanilla Kefir if you want a richer flavor!
