We’re taking a classic grilled cheese sandwich, and then elevating it with probiotics from our tastefully tangy, protein-packed Lifeway Farmer Cheese and chopped spicy kimchi—another probiotic powerhouse! Kimchi, also known as Korean sauerkraut, is well-known for its probiotics, but it’s also high in prebiotic fiber that’s a winning combination for optimal gut health. Fusing Korean kimchi with regular cheese and Lifeway Farmer Cheese gives the sandwich a spicy kick and loads of creamy goodness along with microbiome-loving magic.

Ingredients
- Sourdough Bread
- 1 tbsp. butter
- 1/2 cup grated mozzarella, cheddar, or Monterey Jack cheese (whatever you prefer)
- 1/2 cup Farmer Cheese
- 1/2 cup pepper jack
- 1/4 cup drained and coarsely chopped kimchi (we love a mild/medium heat kimchi here but pick what you prefer!)
Directions
- Heat a medium skillet over medium-low heat. Then spread butter over one side of each piece of soughdough bread.
- Place the buttered side of one slice of bread down. Top with all of your cheeses. Cover with a lid and heat until the cheese has melted down. Top with Kimchi, and and other side of buttered sourdough slice (buttered side up), and flip the grilled cheese.
- Cook until slightly browned on each side and the cheese is melted. Enjoy!
