Ingredients
Dough
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tsp baking power
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp sea salt
- 1/4 cup Plain Lowfat Kefir
- 1/4 cup whipped Farmer Cheese
- 1/4 cup extra virgin olive oil
- 1 large egg
- 1 tsp pure vanilla extract
Coating
- 1/4 cup extra virgin olive oil
- 1/2 cup sugar
- 1 tbsp cinnamon
Directions
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- Add the kefir, whipped farmer cheese, olive oil, egg, and vanilla, and whisk just until the batter is smooth.
- Spoon the batter into a doughnut pan, filling each cup about 1/2 full.
- Bake in the 375-degree oven until the doughnuts are puffed and golden.
- Allow the doughnuts to cool in the pan for about 5 minutes then lift them out of the pan and onto a wire rack.
- Pour about 1 inch of olive oil into a shallow bowl. In another bowl, mix together the sugar and cinnamon. When the doughnuts are cool enough to handle, dip both sides in the olive oil, then dip in the cinnamon-sugar mixture.
