Directions

  1. Line a small baking sheet with a piece of parchment paper and set aside.
  2. Place Lifeway Farmer Cheese, raw almond butter, maple syrup, and vanilla extract in a food processor, then blend together until a mostly smooth texture forms. Transfer this mixture to a medium-sized bowl. Add the almond flour to this bowl, then fold together until just combined.
  3. Next, fold in the mini dark chocolate chips and pistachio kernels. Stir to make sure everything is combined. It should look like cookie dough at this point.
  4. Use an ice cream scoop to portion out 7-8 bites onto the prepared baking sheet and sprinkle with salt flakes, if using. Place the bites in the refrigerator to firm up slightly, about 30 minutes. Remove to serve, and enjoy.
  5. Store leftovers in an airtight container in the refrigerator for up to 3 days—if they last that long!
