- 1 medium baguette, cut into 6 slices (or use a sourdough loaf)
- 2 avocados, pitted and peeled
- 1 clove of garlic
- 2 tsp. red pepper flakes
- 2 tsp. extra virgin olive oil
- 2 tbsp. lemon juice from one fresh lemon
- 2 tbsp. freshly chopped cilantro
- 6 eggs
- 1 cup Farmer Cheese
- 1 1/2 cups baby microgreens (or arugula)
- salt and pepper, to taste
- cayenne pepper, to taste
Directions
- Toast the baguette slices to your liking, then place on a pan or large plate to assemble.
- In a food processor, blend the avocado, garlic clove, red pepper flakes, olive oil, lemon juice, cilantro, salt, and pepper. Set aside.
- Poach the eggs (or you can scramble them, if you prefer).
- Assemble: Spread Lifeway Farmer Cheese on top of the toasted baguette slices, top with the blended avocado/garlic spread from step 2, add an egg on top of each piece, then the microgreens or arugula, and finish with a sprinkle of cayenne pepper. Drizzle with extra olive oil if you prefer. Enjoy!
