Ingredients
- 4 large eggs, soft boiled
- 1 medium lemon
- 2 cups Farmer Cheese
- small dash of salt and pepper
- 2 slices sourdough bread
- Topping: Fresh chopped basil or dill, fresh chives, scallions, extra-virgin olive oil, and pepper.
Directions
- To boil the eggs, lay the eggs in a pan and add water just enough to cover the eggs. Heat the pan until the water started boiling. Lower the heat to a simmer and cook for 6 minutes. When done, immediately transfer the eggs to ice water and let them sit for 2 minutes.
- In a medium bowl, mix together Farmer Cheese, salt, and pepper. Then squeeze in the juice of half a lemon (it helps to bring out the flavors).
- Toast sourdough bread, top with Farmer Cheese mixture, sliced soft boiled eggs, fresh herbs, olive oil, and enjoy!
