This recipe combines Lifeway Kefir with warm spices and our favorite gourd for a breakfast that is pure fall magic in every bite. Topped with sweet maple syrup and fresh raspberries, this cozy meal captures the essence of the season and gets your day started with festive joy.

- Ingredients for toast:
- 4 eggs
- 2 cups Pumpkin Spice Lowfat Kefir
- 1/2 cup pumpkin puree
- 1 1/2 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 12 slices challah bread
- Whipped Pumpkin Butter:
- 1/2 cup Farmer Cheese
- 1/3 cup pumpkin puree
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- Other:
- cinnamon sugar for topping
- maple syrup for topping
Directions
- Melt a small amount of butter in a nonstick pan over medium heat.
- In a large bowl, mix together all ingredients for the toast except the bread until incorporated.
- Slice Challah bread and dip each side in the bowl with the kefir mixture.
- Cook on each side of the coated bread for about 2-3 minutes per side.
- In a food processor blend together all ingredients for the pumpkin butter until smooth.
- Top the french toast with the pumpkin butter mixture. Drizzle maple syrup and cinnamon on top and enjoy!
