Whipped Cheese and Kefir Filling:
- 4 cups Farmer Cheese
- 1/2 cup Whole Milk Plain Kefir
- 2 tbsp. pure maple syrup
- 1/2 - 1 tsp. vanilla
- pinch of salt
Raspberry Mixture:
- 5 cups fresh raspberries
- 1/4 cup powdered sugar (or alternative)
- 2 tbsp. natural orange juice
Other:
- 24 ladyfingers, broken into 1-inch pieces
Decorations/Toppings:
- 1/2-1 cup freshly sliced strawberries
- 1/2-1 cup fresh blueberries
Directions
- Prepare the Whipped Cheese and Kefir Filling: blend the ingredients together in a blender or food processor until creamy, then set aside.
- Add the raspberries to a large bowl, then add the powdered sugar and orange juice, and mash slightly just enough to make a macerated purée. Set aside.
- Line a 9 inch springform pan with parchment paper. Add half the ladyfingers to the bottom, then layer with half the whipped farmer cheese and kefir mixture. Add the remaining ladyfingers on top, the remaining portion of the whipped farmer cheese and kefir mixture.
- Decorate the top with berries to look like a flag. Refrigerate for 3 hours, remove from the pan and place on a cake plate, then slice and enjoy!
