- For Dressing:
- 1 tbsp. organic soybean oil
- 1/2 cup tomato puree
- 1/4 cup Organic Plain Whole Milk Kefir
- 1 tbsp. distilled vinegar (white)
- 1 egg yolk
- 1 jalapeño, diced
- 1 tbsp. onion powder
- 1 tbsp. garlic powder
- 1/4 cup cilantro, chopped
- 1 green bell pepper, diced
- juice of 1 lime
- For Salad:
- 1 head of romaine lettuce, rinsed and chopped
- 1 cup fresh corn kernels
- 1 red bell pepper, chopped
- 1 tomato, chopped
- 1 avocado, pitted and chopped
- tortilla strips/chips
- 1/4 cup, crumbled Farmer Cheese
Directions
- Add all dressing ingredients in a food processor and blend until smooth.
- Add all salad ingredients in a large bowl, toss together well, and top with the Creamy Kefir Salsa Dressing. Enjoy!
