- 2 pieces of your favorite bread (we used sourdough)
- 1/2 cup Farmer Cheese
- 2-3 eggs
- 1 tsp. extra virgin olive oil, coconut oil, or avocado oil to coat the pan
- 1/4 cup chopped fresh chives/spring onions
- 1/8 cup fresh tarragon and/or parsley, chopped or diced
- 1 tbsp. red pepper flakes
- a dash of black pepper
- optional add-ins: diced red or green peppers
- Toppings: more red pepper flakes or hot sauce, if desired and/or sliced avocados
Directions
- Toast your bread, and while it's toasting, heat a pan on medium heat and add the oil to the pan, just enough to coat the pan.
- In a bowl, whisk together the eggs with the fresh chives/spring onions, chopped tarragon/parsley, red pepper flakes, black pepper, and if using, diced red or green peppers.
- Once whisked together, add to the heated pan. Scramble on medium heat until the eggs start to firm up. When they still look a little loose and just under being set, cut the heat off, and put the lid on the pan to let them steam up (this keeps them from getting dry or tough).
- Spread Lifeway Farmer Cheese onto the toasted bread in equal amounts (1/4 cup per piece), then add the scrambled eggs on top, and top with any options you love. We suggest red pepper flakes, a drizzle of hot sauce, or a couple slices of avocado.
