Meet the Spiralizer: Summer’s Hottest Cooking Tool

While poking around recently, we noticed a bunch of people pinning recipes for dishes made with a spiralizer. While it sounds like a tool Barbie might use to style her hair, a spiralizer is actually a tool that lets you turn zucchini, cucumbers, squash, carrots, beets and other vegetables into “noodles.”

Cool Zucchini Noodles with Creamy Avocado Kefir Pesto

  • ¼ cup Lifeway Lowfat Plain Kefir
  • 1 small, spiralized zucchini per person
  • 1 avocado
  • 1 cup fresh basil
  • ¼ cup pine nuts (sub walnuts, pistachios or other nuts)
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon Parmesan cheese (optional garnish)

Blend all ingredients (except the zucchini) in a food processor until creamy and smooth. Salt and pepper to taste. Serve over zucchini noodles.
