Directions

  1. Mix together the kefir, oats, poppy seeds, chia seeds, and lemon juice in a container and refrigerate overnight or 4-5 hours.
  2. Halve and core the apricots and cut the halves apart again in the middle. Cut up the orange and put the apricots, orange juice, orange, 1 teaspoon orange peel and the sugar in a pot and bring to the boil once. Simmer for 5 minutes. Remove the pan from the heat and stir in the vanilla. Allow for it to cool for a few minutes, pour into a jar and refrigerate until serving.
  3. When ready to eat, layer the overnight oats and apricot compote.
