Cloud Eggs with Farmer Cheese

We took the viral cloud egg trend and boosted our recipe with protein for these fluffy, spicy Cloud Eggs with Farmer Cheese. Cloud eggs are fluffy bites of egg-filled pillows that look like clouds since the egg yolks and whites are separated. Most cloud egg recipes use cottage cheese, but we used Lifeway Farmer Cheese instead for no added salt or sugar, plus more protein and live probiotics.

For these Cloud Eggs with Farmer Cheese, we added hot sauce, spices, and chives for a flavorful, pillowy breakfast that has an extra bite, all while keeping things healthy and fuss-free. Directions

  1. Preheat the oven to 425° F. Line a baking pan with parchment paper.
  2. Separate the egg whites and yolks in two bowls. Set the yolks aside separately.
  3. Whisk together egg whites until fluffy and peaks form with a hand mixer. You may add a touch (1/4 tsp.) of cream of tartar to get the peaks stiff if needed.
  4. Fold in Lifeway Farmer Cheese into the egg whites, and add a dash each of salt and pepper to taste.
  5. Layer two dollops of egg white/farmer cheese mixture on the pan covered in parchment paper with a crevice in the middle. Bake at 425 for 3 minutes. Remove and add the yolks in the center of the dollops, and bake for about 10 more minutes. Remove and set aside.
  6. Add one tablespoon of Lifeway Kefir Unsalted Butter to a skillet, and add the thawed, shredded potatoes or the prepared hashbrowns. Cook on a stovetop on medium heat and lightly fry until golden brown. Remove and set aside.
  7. Top the the cloud eggs with the cooked potatoes, and add chives, hot sauce, and red pepper flakes or chili crunch seasoning. Enjoy!
