- 1 cup Blueberry Oat
- ½ cup unsweetened coconut milk (refrigerated kind, not canned)
- ¼ cup raw, shelled pistachios
- 2 cups loose-leaf spinach or a mixture of other fresh greens (baby kale, spring mix, arugula etc.)
- 1 cup frozen pineapple
- 1 tsp. preferred greens powder (optional)
- 1 cup ice cubes or 1 frozen banana
- Add all the ingredients to a blender in the order listed. Then blend on low to get the mixture going and turn to high to blend until completely smooth. Top with unsweetened coconut flakes/shreds and/or 1 tsp. more pistachios. Enjoy with a friend, all by yourself, or save ½ for leftovers (up to 24 hours in the fridge).
