We use pre-made cold brew for the coffee flavor, but you can also use any leftover coffee you have from the week (kept cold in the fridge), or even use instant coffee for a more potent flavor. With increasing research linking the correlation between probiotics, gut health, and immunity, it’s no secret that the integrity of our gut is vital to our health. - 1 cup Lowfat Plain Kefir
- 1/2 cup rolled oats
- 2 tsp. maple syrup or honey
- 1 tsp. almond butter or cashew butter
- 1 tsp. vanilla extract
- 1/2 scoop vanilla protein powder of choice
- 2 tsp. chia seeds
- 2 tbsp. liquid cold brew coffee or 1 tsp. instant espresso/coffee powder
Directions
- Combine all the ingredients together in a small container or mason jar. Place in fridge for 4-6 hours, preferably overnight. You can also blend the mixture before pouring it into a mason jar if you want a thicker consistency since the chia seeds will expand better if blended. Keep in mind, this mixture will thicken up the longer it sits overnight.
- The next morning, grab from the fridge and enjoy! While you can heat overnight oats, we recommend eating them chilled (great for the warmer months!) since heating will reduce the probiotics found in Lifeway Kefir which are most active at cold temperatures.
- Optional: top with a drizzle of additional kefir, coconut flakes, sugar-free chocolate chips and/or cacao nibs
