Prep Time: 45 mins Servings: 6-8Ingredients
- Yukon gold potatoes (yellow potatoes)
- salt, pepper
- 1/4 cup fresh cilantro
- 2 garlic cloves
- 1/2 cup Farmer Cheese
- 1 avocado
- 1/4 cup Plain Lowfat Kefir
- 1/4 cup raw cashews
- 1/4 cup fresh parsley
- top with red crushed pepper
Directions
- In a medium to large pot, bring 2 quarts of water to a boil. Add in the potatoes, and boil until soft.
- Allow potatoes to cool and add them to a baking sheet. Smash down the potatoes drizzle salt, pepper and olive oil. Bake for 30 mins on 400 degrees.
- Add in the salt and pepper to taste. Then add fresh cilantro, garlic cloves, Farmer Cheese, avocado, Plain Lowfat Lifeway Kefir, cashews, and fresh parsley, into a food processor or blender and blend until smooth and creamy.
- Dip the smashed potatoes in the farmer cheese dip and enjoy!
