- ¼ cup Farmer Cheese
- 4 whole-wheat pita breads
- 1 cup micro greens
- ½ cup fresh pesto
- ½ cup cooked garbanzo beans
- 1 small onion, cut into thin rings
- 10 kalamata olives, pitted and halved
- 4-5 artichoke hearts, halved
- 1 tsp hemp hearts
- ¼ cup pine nuts
- freshly ground black pepper
- fresh basil and mint leaves, to garnish
- Grill pita bread (or toast in even at 400F for 8 minutes).
- Spread the farmer cheese onto the pita breads and top each with a micro greens, chickpeas, onion, olives, artichoke hearts, hemp hearts, and pine nuts. Season to taste with salt and pepper. Garnish with basil and mint leaves, as desired.
