Prep Time: 15 mins Servings: 10-12

Directions

  1. Preheat the oven to 350 degrees Fahrenheit, and line a large baking tray with parchment paper.
  2. In a mixing bowl, combine Farmer Cheese, kefir butter, molasses, and coconut sugar until creamy (you can use a stand mixer, if desired).
  3. Add the dry ingredients, then stir again, until the dough starts to form.
  4. Scoop the dough and form it into small balls, about 1 inch in diameter, then roll in additional coconut sugar (if desired).
  5. Place each piece of cookie dough onto the prepared baking tray, and leave a couple inches in between each one to allow room for the cookies to expand while baking.
  6. Bake for 10-12 minutes, or until the tops have a light brown golden color; do not overbake.
  7. Remove from the oven, let the pan cool for 15-20 minutes, then remove the cookies and serve. Will keep at room temperature for 1-2 days (can refrigerate if keeping them longer).
