Directions

  1. Toast the bread to your liking. While it's toasting, prepare the rest of the recipe.
  2. Place the grated cucumber in a fine mesh sieve and press firmly to squeeze out as much moisture as possible.
  3. Make the tzatziki sauce. Add the drained cucumber, minced garlic, 1 tbsp. of fresh dill, 1/2 tbsp. olive oil, lemon juice, black pepper, and salt to the food processor. Mix until everything is well incorporated. Taste, and add extra salt as needed.
  4. Add the Lifeway Farmer Cheese to a food processor and blend/whip until smooth and creamy in texture. Spread 1/3 cup onto each piece of toasted bread.
  5. Layer each piece of toast covered in the farmer cheese with the prepared tzatziki sauce. Press it down a little with a spoon, then add even amounts of the toppings onto each piece of prepared toast. Enjoy!
