Cupcakes and Chantilly cakes appear on tables everywhere during spring, so we decided to turn these two desserts into one elegant, tropical flavored treat we know you’re going to love.

Mango brings a sweet and juicy tropical flavor, while yuzu adds a unique layer of tartness citrus fruits are known for. Creamy, rich Lifeway Organic Whole Milk Kefir used in the cupcake batter helps keep the cupcakes tender and soft as they bake thanks to our kefir’s live and active cultures. In addition, Lifeway Kefir is a natural source of complete protein along with vitamin D3, B vitamins, potassium, and calcium.

Prep Time: 2 hours Servings: 12

Directions

  1. Heat oven to 325°F. Prep a 12-cup cupcake pan/muffin pan with liners. Set aside.
  2. In bowl, cream Lifeway Kefir butter and sugar. Add eggs and vanilla. Mix until thoroughly combined.
  3. Sift flour, baking powder, baking soda, and salt into another bowl. Add half of dry mix to the bowl from step 2 and pour in 1/2 cup of the Lifeway Kefir. Stir until combined, then repeat with the other half of the dry mix and the other 1/2 cup kefir. Mix with a stand mixer or hand mixer if needed to get it all combined.
  4. Spoon the batter into the prepared cupcake pan until you have all 12 cups filled. Make sure to leave a little room in the top for each cupcake to expand as it bakes up.
  5. Bake the cupcakes 25 minutes and let them cool. As they cool, make the frosting.
  6. To make the frosting, add Lifeway Farmer Cheese and maple syrup to a food processor and blend until smooth.
  7. Make the yuzu curd filling/topping: Add eggs, yuzu juice, and sugar to a heatproof bowl and whisk together until combined. Add 1 inch of water to a small pot on the stove and turn the heat to high just until the water starts to simmer. Place the bowl with the yuzu juice, eggs, and sugar on top until it thickens up like a gravy. Stir incrementally so it doesn't burn until you have a thick sauce-like texture. Remove from the heat and stir in the Lifeway Kefir butter until combined. Let it cool down before using.
  8. Frost the cupcakes, then dollop the curd in the center of the frosting once it's completely cooled. Add diced mango on top of each cupcake, serve, and enjoy!
