- ½ cup Strawberry Grassfed Kefir – Lactose Free
- 8 oz Farmer Cheese
- ¼ cup finely crush dehydrated strawberries
- 2 tsp vanilla extract
- ½ cup powdered sugar
- 1 cup heavy cream
- 1 cup quartered strawberries
- 2 tsp granulated sugar
Directions
- To the bowl of a food processor add the strawberry kefir, farmers cheese, powdered sugar, vanilla,and crushed dehydrated strawberries.
- Process everything together until well combined, and transfer to a large bowl.
- Add the heavy whipping cream to a medium bowl and beat until medium soft peaks form.
- Add a little less than half of the whipped cream to the strawberry base and gently fold together.
- Once combined, gently fold in the remaining whipped cream until it’s also just combined.
- Divide the mousse evenly amongst 4-5 cups. Place in the fridge and let chill for at least an hour.
- As the mousse is chilling, prepare the strawberries. In a small bowl combine the quarters strawberries and sugar together and let sit for at least 30 minutes.
- Serve each mousse cup with a few spoonfuls of macerated strawberries and their juices.
