- 2 tbsp. olive oil
- 1 medium onion, diced
- 1 red bell pepper, diced
- 4 garlic cloves, chopped
- 2 tsp. paprika
- 1 tsp. cumin
- 1/4 tsp chili powder
- 1 28oz. can whole peeled tomatoes
- 6 large eggs
- salt and pepper to taste
- 1 small bunch fresh cilantro, chopped
- 1 small bunch fresh parsley, chopped
- 1 cup Farmer Cheese
- 1 baguette, sliced and toasted
Directions
- Heat olive oil in a large pan over medium heat. Add chopped bell pepper and onion. Cook for about 5 minutes. Add garlic and spices into the pot and cook for another couple of minutes.
- Pour the tomato can with the juice into the pan and break down tomatoes. Season with salt and pepper and bring to a bowl.
- With a large spoon, make small wells in the sauce for your eggs. Crack one egg in each well. Add in Lifeway Farmer Cheese chunks, do not stir. Cover and cook 5-8 minutes. The longer it cooks, the more done the eggs will be.
- Garnish with cilantro and parsley. Toast baguette and dip into Shakshuka, enjoy!
