Prep Time: 15 minutes Servings: 2 piecesIngredients
- 1 cup fresh snap peas, washed and cut diagonally
- 2 tsp. extra-virgin olive oil
- 2 tsp. fresh lemon juice
- 4 mint or basil leaves, chopped/minced
- flaky sea salt and pepper, to taste
- 2/3 cup Farmer Cheese
- 2 slices bread of choice (we used sourdough)
- additional sprinkle of flaky salt, if desired
Directions
- Toast the bread to your liking.
- As it's toasting, make the snap pea salad. Add the snap peas, olive oil, lemon juice, mint or basil leaves, and a pinch of salt and pepper to a medium bowl; mix to combine. Taste, and add additional salt or lemon juice as needed. Let this sit for 10 minutes to marinate.
- Divide the farmer cheese mixture between the two slices of toast, so there is 1/3 cup spread onto each piece of toast.
- Top each toast with an equal portion of the snap pea salad, followed by a light sprinkle of flaky salt, if desired. Enjoy!
