- 1 cup Farmer Cheese
- 2 thick pieces of gluten-free or sourdough bread of choice
- 4 large eggs
- 1 cup baby spinach
- 1 1/2 tbsp. Unsalted Kefir Butter
- salt and pepper to taste
- freshly chopped chives or other herbs of choice
- optional: red pepper flakes for topping or freshly cracked black pepper
Directions
- Toast your bread to your liking, and while it's toasting, prepare the egg mixture.
- Blend the eggs with the spinach and a couple dashes each of sea salt and black pepper.
- Add the butter to a skillet and turn the heat to medium-high heat. Let the butter melt just a little, then add in the egg mixture.
- Scramble the eggs until they start to firm up but are still a touch loose. Place the lid on the skillet, turn the heat off, and leave them in the pan. They'll finish cooking without becoming overdone while you prepare the toast, but this helps keeps them warm.
- Place your toast on 1-2 plates and spread 1/2 cup of Lifeway Farmer Cheese on each piece of toast. Remove the egg mixture from the pan, and place half the eggs on one piece of toast, and the other half on the other piece of toast. Top with freshly cracked black pepper or red pepper flakes. Serve and enjoy!
