- 3 cups pasta
- 1½ cup fresh organic baby spinach
- 1 cup Farmer Cheese
- ½ cup grated Parmesan cheese
- ½ tsp of thyme
- salt & pepper
- 1/4 cup extra virgin olive oil
- 1 tsp capers
- 1/2 lemon juice
- couple pinches of salt
- Toss cooked pasta with farmer cheese, Parmesan, spinach, herbs, and the lemon dressing.
- Top with fresh basil leaves + lemon zest
