Directions

  1. Preheat the oven to 450 °F.
  2. Add the flour, baking powder, and salt to a large bowl and stir to combine. Use a fork or a pastry cutter to “cut in” or incorporate the cold kefir butter until only small pea-sized crumbs are remaining.
  3. Stir in the mashed cooked sweet potatoes, maple syrup, and kefir.
  4. Place dough onto a floured surface and sprinkle some more flour on top. Roll the dough out to 1/2-inch thick and cut with a biscuit cutter. Place the biscuits on a greased pan and coat tops with melted kefir butter. Bake for about 15 minutes. (Watch your oven: If the biscuits are browning too fast, lower the temperature.)
  5. Make cranberry butter by using a hand mixer to whip kefir butter in a medium bowl until light and fluffy. Add orange zest and cranberry sauce and mix to combine. Place in a serving dish and garnish with fresh cranberries, if desired. Serve at room temperature, and refrigerate leftovers.
