Cool Zucchini Noodles with Creamy Avocado Kefir Pesto
- ¼ cup Lifeway Lowfat Plain Kefir
- 1 small, spiralized zucchini per person
- 1 avocado
- 1 cup fresh basil
- ¼ cup pine nuts (sub walnuts, pistachios or other nuts)
- 2 cloves garlic
- 1 tablespoon lemon juice
- 1 tablespoon Parmesan cheese (optional garnish)
Blend all ingredients (except the zucchini) in a food processor until creamy and smooth. Salt and pepper to taste. Serve over zucchini noodles.
