Meet the Spiralizer: Summer’s Hottest Cooking Tool

If you’re like us, you spend way too much time on Pinterest, searching for cool new recipes to make with Lifeway Kefir. Like Kefir Plum Overnight Oats. Or fish tacos. Or Coconut Kefir Pancakes. While poking around recently, we noticed a bunch of people pinning recipes for dishes made with a spiralizer. While it sounds like a tool Barbie might use to style her hair, a spiralizer is actually a tool that lets you turn zucchini, cucumbers, squash, carrots, beets and other vegetables into “noodles.”

Any Way You Slice It

You can make spaghetti, wide ribbons, fettuccini – all sorts of faux pasta, then dress them up with various sauces, sautéed veggies, seafood, you name it. In the summer, when a heaping plate of pasta sounds to heavy, a spiralizer (or spiral slicer) gives you the pasta vibe without the sagging stomach. That way you can enjoy Cookie and Kate’s healthy Pad Thai, Katlyn’s delicious Julienned Zucchini Vegan Mexican Bowl and Megan’s Roasted Corn & Zucchini Salad with Chili Lime Vinaigrette

This handy tool will also give you healthy baked sweet potato fries, Greek salad, or any of these 25 Healthy Recipes You Can Make at Home with a Spiralizer. Clearly it’s a tool that does the work!

Now, why don’t you combine two fab tools in one and whip up some Cool Zucchini Noodles with Creamy Avocado Kefir Pesto? This recipe comes from Rebecca Scritchfield, RD, founder of Capitol Nutrition Group in Washington, DC:

Cool Zucchini Noodles with Creamy Avocado Kefir Pesto

  • ¼ cup Lifeway Lowfat Plain Kefir
  • 1 small, spiralized zucchini per person
  • 1 avocado
  • 1 cup fresh basil
  • ¼ cup pine nuts (sub walnuts, pistachios or other nuts)
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon Parmesan cheese (optional garnish)

Blend all ingredients (except the zucchini) in a food processor until creamy and smooth. Salt and pepper to taste. Serve over zucchini noodles.
