- 1 cup strawberries, diced
- 1 cup blueberries
- 3 cups gluten-free flour
- 1 3/4 cup Strawberry Lowfat Kefir
- 3/4 cup olive oil
- 2 tbsp cane sugar
- pinch of salt
- 4 tsp. baking powder
- 2 tsp. vanilla extract
- fresh berries for topping
- Preheat waffle iron .
- In a small bowl, mix together oil, kefir, vanilla, and sugar together.
- In a large bowl, mix together four, baking powder, and salt. Pour the small bowl of wet ingredients into the dry ingredients and mix until smooth. Fold in fresh berries.
- Pour batter into the waffle iron and cook according to the iron's instructions.
- Top cooked waffles with fresh berries, and a drizzle of your favorite maple syrup.
