Directions

  1. For the Waffles: Preheat waffle iron according to manufacturer instructions and lightly spray with coconut or olive oil cooking spray.
  2. In a medium bowl, whisk together oat flour, protein powder, flax seed meal, baking powder, and salt.
  3. In a separate bowl, whisk the egg, 1 cup of Lifeway Kefir, maple syrup or honey, and vanilla.
  4. Add wet ingredients to dry and mix until just combined. Gently fold in blueberries.
  5. Pour 1/4 the batter onto the waffle iron and cook for 3-4 minutes or until golden brown. Repeat with the remaining batter. This recipe should make about 4 waffles, but it may vary depending on the size of your waffle maker.
  6. Make the Lemon Cream Topping: Blend or whisk Lifeway Farmer Cheese and 2 tbsp. Lifeway Kefir with the lemon zest, lemon juice, and pure maple syrup or raw honey until smooth and pourable. This is easiest if you use a blender or food processor.
  7. Once the waffles are done, top them with the Lemon Cream Topping, and then sprinkle on additional fresh blueberries and/or other fruits if desired. Enjoy!
