Bottom Layer:
- 1 cup Lowfat Blueberry Kefir
- **Or you can use our plain kefir for a less-sweet version.
- 1/4 cup chia seeds
- 1 tbsp. pure maple syrup or honey
Top Layer:
- 1 cup Lowfat Blueberry Kefir
- **Or you can use our plain kefir for a less-sweet version.
- 1/4 cup chia seeds
- 2 tsp. matcha green tea powder
- 1 tbsp. maple syrup or honey
Additional Ingredients:
- fresh blueberries
- low sugar, gluten-free granola of choice
- optional: 1/4 cup blueberry preserves or fruit-sweetened blueberry jam
Directions
- Using two small bowls, whisk together ingredients for both layers separately. Cover each and refrigerate for 30 minutes or until thick; you can also leave this overnight if desired in the fridge.
- Remove from fridge and add bottom layer to two glasses. If using the preserves or jam, spoon it in next. Divide the top layer of the pudding between the two glasses to complete assembly.
- Top each glass with granola and blueberries, then enjoy!
