Directions

  1. Spray 9x13 casserole dish and preheat oven to 350 degreese
  2. Heat oil in a large skillet over medium heat, and onion, salt/pepper and saute until onion is softened. Add broccoli and mushrooms and saute for around 7 mins. Add in tomatoes and cook for another 3-5 minutes.
  3. In a large bowl, mix together eggs, Kefir, Farmer Cheese, Cheddar cheese, dijon mustard, hot sauce, salt/pepper to taste. Once mixed together, add in shredded potatoes and eggies and mix until all incorporated.
  4. Throw the mixture into a casserole dish and bake for 55-60 minutes.
  5. Enjoy!
