- 2 Broccoli Crowns
- 1 cup grape tomatoes
- 8oz Mushrooms
- 1 onion
- 8 eggs
- 1 tsp dijon mustard
- 1 tbsp hot sauce
- salt and pepper to taste
- 1 tbsp olive oil
- 3-4 cups potatoes, shredded
- 1 1/4 Cups Cheddar Cheese
- 1/3 cup Farmer Cheese
- 1 1/4 cup Organic Whole Milk Plain Kefir
Directions
- Spray 9x13 casserole dish and preheat oven to 350 degreese
- Heat oil in a large skillet over medium heat, and onion, salt/pepper and saute until onion is softened. Add broccoli and mushrooms and saute for around 7 mins. Add in tomatoes and cook for another 3-5 minutes.
- In a large bowl, mix together eggs, Kefir, Farmer Cheese, Cheddar cheese, dijon mustard, hot sauce, salt/pepper to taste. Once mixed together, add in shredded potatoes and eggies and mix until all incorporated.
- Throw the mixture into a casserole dish and bake for 55-60 minutes.
