- 2 Honeycrisp or Gala apples
- 2 cups Farmer Cheese
- 1 tsp. vanilla
- 2 tsp. cinnamon
- 3 tbsp. raw honey or maple syrup
- 1 tsp. coconut oil for caramelizing the apples
- Topping: apple pie spice or pumpkin pie spice, extra drizzle of extra honey or maple syrup
- your favorite crackers or gluten-free cookies/biscuits for dipping*
Directions
- For the apples, chop them up into slices, removing the core and the stems and add to a cast-iron skillet or non-stick pan coated in 1 tsp. coconut oil. Spread them out and cook on medium heat until they start to soften until fork tender. Sprinkle with cinnamon and add the honey/maple syrup, and cook just a few minutes more to soften and caramelize them a bit more.
- Place Lifeway Farmer Cheese into a bowl with the vanilla and whip with a fork until incorporated and smooth (or use a hand mixer to whip it up even creamier).
- Add the cooked apples on top. Drizzle with the extra honey or maple syrup and add apple pie spice on top or pumpkin pie spice. Swirl with a fork just to make it look pretty, then serve with your favorite crackers/biscuits (see suggestions below).
