Directions

  1. Slice the cucumbers in half lengthwise and use a melon baller or small spoon to scoop out the seeds. Blot the insides of each cucumber with a paper towel to remove excess moisture. Set aside.
  2. Place the farmer cheese, chives, olive oil, garlic, salt, and pepper into the container of a food processor. Blend everything together for about a minute, or until a thick, yet whipped texture forms.
  3. Transfer the whipped farmer cheese to a piping bag or a ziplock bag. Cut the tip of the bag, and pipe a line of filling inside each cucumber half.
  4. Garnish each cucumber boat with diced tomato, diced onion, and a sprinkle of everything but the bagel seasoning. Cut each cucumber boat in half before serving and enjoy.
