- "Ice Cream":
- 1 cup Farmer Cheese
- 1 cup raw cashews, soaked
- 1 8 oz. can coconut milk
- 1/2 cup pure maple syrup
- 2 tbsp. nut butter
- 1/2 tsp. vanilla bean paste
- 1/4 cup Vanilla Whole Milk Kefir
- Caramel:
- 1 cup nut butter
- 1/2 cup pure maple syrup
- 1 tbsp. maca powder
- 1 tbsp. additional Organic Whole Milk Vanilla Lifeway kefir
- 1 tsp. sea salt
- 1 cup roasted peanuts (or another nut of choice)
- Dark Chocolate Coating:
- 2 cups dark chocolate of choice
- sea salt
Directions
- Blend together "Ice Cream" ingredients and place in a 9”x9” freezer friendly container; freeze for 4 hours or more.
- Blend together "Caramel" ingredients and place over frozen ice cream. Top with peanuts and freeze for a couple hours.
- For the coating: In a double boiler, melt down chocolate until smooth and silky.
- Take out the frozen bars, slice into small rectangles, then dip in chocolate. Once chocolate is hardened, drizzle more melted chocolate, and sprinkle sea salt on top. Enjoy!
