- 4 -6 hardboiled eggs, chopped
- 1/2 cup whipped* Farmer Cheese
- 3-4 tbsp. Lowfat Plain Kefir
- *or try our whole milk kefir for a richer texture and flavor
- 2 tbsp. Dijon or your favorite mustard
- 1 tbsp. minced chives
- 2 tbsp. diced onion (we used red)
- salt and pepper to taste
- Serving ideas: crackers, celery sticks, baby carrots, or red bell pepper strips
Directions
- *To whip the Lifeway Farmer Cheese, simply place it in a mini food processor until creamy; this step is optional but recommended for the best texture.
- Take a medium-sized glass dish and add the chopped hardboiled eggs. Next, add the whipped Lifeway Farmer Cheese and the Lifeway Kefir, then stir to combine. Mix in the mustard and stir again. Add chives, red onions, and salt and pepper; mix again.
- Split the recipe into 2 servings and enjoy! Serve with crackers, celery sticks, baby carrots, or red bell pepper strips.
- Meal Prep Tip: This will keep for up to a week in the fridge but will taste best if used within 3 days.
