- 2 slices multi-grain bread, toasted
- 2 eggs, cooked sunny side up
- 6 cherry tomatoes, diced
- 4 tbsp. salsa
- 1/2 avocado, thinly sliced
- fresh cilantro leaves
Black Bean Puree
- 1/2 can black beans, drained
- 1/2 cup Farmer Cheese
- 1/2 tsp. chili powder
- 1/2 tsp. garlic powder
- 1/2 tsp. cumin
- 1 lime, juiced
- pinch of salt
Directions
- Black Bean Puree: blend everything together in a food processor, spoon into a small bowl, and set aside.
- Layer the toasted bread with the black bean puree, sunny side up egg, avocado, salsa, tomatoes, cilantro, and small dollops of farmer cheese.
