Directions

  1. With a fork, poke multiple holes in each potato and lay out on a baking sheet. Drizzle olive oil over the potatoes and sprinkle with salt.
  2. Bake for 25-30 minutes in a preheated oven to 425 degrees.
  3. Spoon out the center of each potato after they have cooled slightly and add to a bowl.
  4. Add in Lifeway Farmer Cheese, sharp cheddar cheese, chopped chives, onion and garlic powder, and salt/pepper to taste. Mix until smooth.
  5. Add the mixture back to the center of each potato skin. Top with additional cheddar cheese and Italian seasoning.
  6. Bake for an additional 10-15 minutes. Allow to cool before serving!
