Directions

  1. Preheat oven to 375°F. Line a muffin tin with liners or coat lightly with nonstick cooking spray.
  2. Whisk together oat flour, baking powder, baking soda, salt, rosemary, cinnamon, and orange zest.
  3. In another bowl whisk together the Lifeway Kefir, honey, oil, eggs and egg white, vanilla, and orange juice.
  4. Gently fold wet into dry until just combined.
  5. Divide the batter into 10–12 muffin tins, and be sure to leave about 1/4 an inch from the top to allow room for the muffins to rise.
  6. Bake the muffins for 20–24 minutes until lightly golden and set in the center.
  7. Cool completely before removing (oat flour sets up better the longer it cools).
